Beer Baked "Mieliebrood"

We’ve all been in that situation where a last minute braai invite comes our way and we’re left with a clueless expression of what to take along, on our faces. Especially when you need to impress because it’s braai where the Tannie’s will dissect every ingredient in your recipe to be able to rate your worthiness to cook ... or maybe your worthiness to live... depending on the Tannie.

This recipe will not only save you every time but will have the Tannies calling you around the corner to coax the recipe out of you.

INGREDIENTS
4 cups self raising flour

1 tin sweet corn (liquid drained)

2ml salt

1 500 ml tin of beer (your choice, alcoholic or non alcoholic)

METHOD

Preheat oven to 180 degrees.

Measure the 4 cups self raising flour into a mixing bowl.

​

TIP: Use one of those old “blik skottels” for authenticity to impress the Tannie’s with when you share your amazing baking skills with them later.

​

EXTRA TIP: This would be a great opportunity to barter for something in exchange especially if one of the Tannie’s have a handsome son or grandson... trust me, now’s your chance girl!

​

Add the 2ml salt and the contents of the tin of sweet corn (after draining liquid) to the bowl.

Take your wooden spoon and give it all a quick mix.

Open your can of beer and go ahead and take a sip.

Add about half the can to your flour, salt and sweet corn, using your strong arm to mix.

Continue adding about half the contents of the can of beer, at a time, to the mix before stirring each time.

The end mixture should be sticky, with just enough beer to coat all the dry ingredients, leaving no floury residue behind in the bowl.

If you’ve done it right, there will still be a decent sip of beer left in the can for you to enjoy after all your hard work mixing the dough... at this point you should also understand why you should use your strong arm.

Butter or oil your bread tin and scoop bread mix into the tin to bake at 180 degrees for one hour.

​

Serve your bread with real butter and homemade jam and get ready to meet the man of your dreams.

Fire - Roasted Veggies

This one is pretty easy my friends..

​

Take a variety of veggies and wrap it all up in some tin foil with butter, garlic, salt and pepper.

​

Gooi it on the fire until it's cooked (turn it every now and then).

​

Enjoy :)

​

TIP: Cooking time depends on how hot the fire is so keep an eye on it.

​

EXTRA TIP: Precook veggies like potato, butternut, sweet potato etc. to decrease the cooking time on the fire.

Roasted Chicken with Curry Dressing

If you're anything like me, a good, fool-proof, easy-peezy recipe, is LIFE! Especially when you've been running around like a mad chicken all day, trying your best to adult. (We've all been there).

​

INGREDIENTS

1 onion

1 butternut

1 sweet potato or a couple regular potatoes

2 or 3 carrots

1 green pepper (if you're not one of those weirdos that don't like cooked green pepper)

A lot of fresh garlic cloves (A LOT! Especially now that we live in the times of the dreaded virus which shall not be named)

TIP: Roasted garlic boosts the immune system.

Fresh rosemary

1 whole chicken or a selection of your favourite chicken pieces (thighs & drum sticks for eg.)

Salt, pepper, paprika, chicken spice to season

Good quality olive oil or coconut oil

METHOD

Take one of those big black oven pans (those ones that you hate scrubbing after the meal is done - it will be worth it, I promise) and coat it with some olive oil or coconut oil (just microwave the coconut oil before you start, so that you don't need to go fetch the garden pick out of the garage to break off a piece of coconut oil).

Chop all the veggies into similar sized pieces before layering them into the oil covered pan. Season to taste with salt, pepper, paprika and fresh rosemary.

Take a whole head of garlic and break off the cloves (skin and all) and just gooi it into the mix.. klaar net so, dis al!

Drizzle some more oil over and give it a good mix before continuing.

Next, loosely arrange the chicken pieces on top of the veggies and spice them with salt, pepper, paprika and chicken spice on both sides, rubbing the spices into the skin, gently.

Drizzle or paint some oil onto them as well.

Take those nicely prepped chicken pieces and nestles them in between the veggies.

When it all starts to cook and the juices start to flow, the veggies will add flavour to the chicken and vice versa.

​

If at this point you've had enough and you're all cooked out, put it in the oven at 180 degrees and go have a glass of wine. (Just don't fall asleep on the couch before dinner's done).

​

Should you feel like you've won at adulting today and want to kick some more a$$, here's a quick recipe for the curry dressing.

​

CURRY DRESSING

​

INGREDIENTS

2 lemons (roughly measure the juice)

Add the same amount in honey (about 2-3 table spoons)

2 table spoons of curry powder

​

TIP: Usually you would add herbs, salt and pepper, oil etc. to a dressing mix but it's all been added to the food in the oven anyway.. so don't fuss!

​

Add the dressing to the food in the oven, after half an hour has passed.

​

Total cooking time +- 1 hour.

​

Dish up and enjoy :)
